Creative: pro- easier to build. con- griefers would destroy it
Survival: pro- harder to grief and would be more of an achievement. con-need to get all the materials ourselves

So i agree that we should probably start building when we know that the server is stable and won't get wiped. It would be a shame if we went through all that work just to see a wipe come and destroy it all.
