Checking the history for the air block just above each of the 9 grass blocks in each stall and taking the most recent event:
Left-hand stall:

- TNTxCREEPER entered horse 5d14h17m ago (a:enter)
History shows that player also opened both doors.
Middle stall:
Prism // --- Inspecting air at -2192 69 95 ---
- smirresmirre entered horse 13h53m ago (a:enter)
History shows that player also opened both doors.
There's history showing other players also getting on the horses, but you can see they also got off the horses whilst still in the stables.
Note that there is a sign indicating that those two stalls were private.
I'm pretty certain that both horses had saddles. One was black, and I'm pretty sure it was the one in the left stall. Predictably, I found a black horse very close to the Tower of Ozy. It had no saddle so I guess TNTxCREEPER kept that.
